in Manhattan know their way around an animal. They’re two stars in the wave of new-school butcher shops that have been opening around the country. You know, the kind where the meat comes from a nearby farm, where they utilize every single part, and the butchers behind the counter will talk to you forever about which cuts are which, how to prepare them, and urge you to try the weird thing you’ve never heard of before.
There are questions to consider before you get to the counter. If you don’t know 100% what you’re buying, at least think about the answers to these questions. Bone in or bone out? Fatty or lean? How many people are you feeding? How do you want to cook it? Do you have a recipe you’re already working with?
These days there are a slew of “new cuts” that are branded with different names—the Denver steak, the Las Vegas strip. In LA people are really after tri-tip. In New York at certain places, they cut the tri-tip a little differently and call it the Newport steak. So if you’re unfamiliar with something, just ask!
