Banoffee pie hadn’t yet made it on Hungry Monk’s menu when Leith visited , and it wasn’t until the chef at her own restaurant proposed adding it to their dessert trolley that she had a chance to taste it for herself. “I confess most of them loved it, but I vetoed it ever appearing on our trolley for which, I immodestly say, we were justly famous,” she says. For Leith, the popular dessert was simply too sweet and rich.
When you work in food and you find yourself making a dish you don’t like again and again and again…you start to think about how you’d improve it, or at least make it suitable to your own tastes, and that’s just what Leith did. And, as she points out, the pie already had some great strengths: “I think raw, creamygo well with whipped cream and the pastry or biscuit crust provides a contrasting crunch,” she explains.
