Aurora officials are looking at a redevelopment deal to bring a new $4.5 million restaurant-brewery project downtown.

The Vargas building on Water Street Mall, along Galena Boulevard and the east bank of the Fox River in downtown Aurora, may be turned into a restaurant-brewery.

“We’ve been working on this for about a year,” said David Dibo, Aurora’s Economic Development director. “It’s a particularly challenging time for restaurants and for development.” “This is a great community,” said Brant Cohen, development associate for CL Real Estate. “We want to continue to invest and grow in it.”

In the 10,400-square-foot space in Aurora, the company would be looking at about an 80- to 100-seat restaurant on the first floor, and about a 120-seat event space on the second floor. Cohen said the company anticipates creating about 55 full-time jobs, about 80% of which would be quality jobs with benefits and advancement potential. All the jobs would be “100% accessible,” he said, meaning they would need only a high school diploma or GED equivalent as a requirement. He added they anticipate creating about 100 construction jobs.
