Here’s what happened after carrot cake met carrot halwa, the milky, long-cooking, spoonably-soft confection common in South Asia.
The cake is okay - a bit bland in terms of flavour, but it has a nice texture. The glaze was a disaster. I tried to make it twice, and both times the cream started to burn on the bottom while things remained totally pale on top. To try and stop the burning, I gave in to the temptation to stir and got things evened out. Despite the golden brown colour matching the pictures, the glaze became extremely hard after cooling even slightly. The texture was like a hard candy or brittle.
When I got to the glaze, I confidently followed instructions and didn't balk when it looked like it was about to boil over. Even when it boiled over, burning sugar onto the stovetop, I didn't fully panic. But the glaze didn't properly thicken , so I do recommend to use a medium saucepan vs small, and if you have a stove that you know, deep in your bones, gets hotter than High heat, maybe dial that heat back a touch.
