Strawberry Jam–Filled Donuts? Say less!

In a small pot, heat about ½ cup of the milk until warm but not hot, about 90°F. Transfer to a small bowl, add the yeast, and lightly stir to combine. Let sit for about 5 minutes, until foamy.

Lightly grease a large bowl , preferably with nonstick oil spray, or a spread a little neutral oil, like canola or vegetable, with a paper towel. Arrange the dough in the bowl and cover with a towel or plastic wrap. Set in a warm area for 2 to 3 hours, until doubled in size. Alternatively, let it rise for 1 hour, wrap in plastic, and let rise overnight.

Gather the scraps, reroll , and cut in the same manner. Leave a few pieces of dough of the same thickness to test the oil. When ready to fry, fill a large deep pan or pot with oil. Heat over medium-high until an instant-read thermometer registers 350°F.

Their hard shells, once roasted or boiled, crack open to a soft and starchy nut that you can sink your teeth into like a boiled potato. Their flavor is mild and, if roasted over fire, a little smoky. In savory recipes, chestnuts are wonderful for thickening soups and stews. They add nuttiness to dressings, and are great for candying. In this recipe, the chestnut is pulsed into a coarse meal and replaces some of the flour, adding moisture to the delicate and buttery crumb. The remaining coarsely chopped chestnuts are rolled onto the exterior of the thumbprint cookie with the addition of sugar and warming cinnamon or cardamom to add a touch of spice and crunch as the cookies bake up and invite the scent of the season in.
