These cookies are SO delicious and worth all of the processing. However, like others, I struggled with the format of the recipe and method. Two cups of pecans weren't enough but luckily I counted out the 26 for the toppers before measuring out the rest for the batter and frangipane. I also wish the ingredients were listed by weight instead, it'd just make the pecan measurement especially feel less like guesswork.Love these cookies.
halved the recipe and didnt have a food processor-just used a spice grinder to make the ground pecans. I used an electric hand mixer instead of a stand mixer, too.Excellent. The espresso in the frangipane topping really made the cookie outstanding. A bit time consuming to make, but worth it for the holidays.Absolutely delicious and unique! They turned out perfectly on the first try. I actually thought they tasted better on the second / third day after baking...
