. “All of the wines are ready to drink now. They all follow the easy-drinking rules of low tannin, high acidity, and moderate alcohol–body,” James says. “My favorite wines always come from a specific area, if you could draw a circle on a map: eastern and southern France, Germany, Austria, Switzerland, and Northern Italy. According to winemaker Franz Strohmeier, Wildbacher was originally made into a light pink wine because of ‘the late ripeness and the higher acid, making it a better rosé than a red.’ A specialty only of Styria, the style gained hype in the 1990s. Franz’s wine is made in a completely natural style, using only indigenous yeasts for fermentation, resulting in a wine that truly speaks to a sense of place.
