"We see this a lot more in the sophisticated restaurant chains that are beginning to really embrace off-premise and delivery," said Trevor Boomstra, director of AlixPartners' restaurants, leisure and hospitality practice. "Two and a half years ago, some of the largest delivery companies in the world were still trying to convince chain operators of the merits of it," Allen said.
