1 Granny Smith apple, peeled, cored & choppedInstructions: Preheat oven to 350 degrees. Line 2 large rimmed baking pans with parchment paper.
In a small bowl combine the bran cereal and applesauce. Allow the cereal to soften and set aside. In a large bowl whisk together oats, flour, cinnamon, baking soda, kosher salt and nutmeg until combined. Whisk together the brown sugar, butter, egg and applesauce-bran mixture until combined. Combine all of the above Ingredients and then stir in the chopped apple, dried cranberries and chopped walnuts until well combined.
Place 1½ tablespoon scoops of dough on prepared parchment baking pans, spacing about 2 inches apart. Gently press the dough with a greased palm to flatten the tops. Bake for 10-12 minutes.Makes about 30 cookies
