No, it’s not just another cheese drawer.
Pop open your fridge door and look at the drawers within. They look just like normal drawers, right? The drawers where you throw everything that doesn’t fit on the fridge shelves, like apples. Or celery. Or...beer.
These drawers aren't just drawers. They're crisper drawers. And if used properly, they can protect yourBut who knows how to actually use these things? Not me. So I spoke with a major manufacturer of refrigerators to sharpen my crisper skills. Here's what I learned.Just having the drawers is a nice storage option, but being able to control them is even better.
"Most of the humidity inside a crisper is supplied by the produce itself," said Greg Evans, Director of Program Management for Food Preservation at. The humidity setting refers to the amount of space in the drawers left open to airflow. Where low-humidity drawers can introduce some airflow into the drawer, a drawer with the high-humidity setting is closed off completely. As you’ll see in a minute, both serve an advantage, depending on the produce you’re storing.
__Low-Humidity: __Store ethylene-producing fruits and vegetables, like apples, apricots, avocados, ripe bananas, cantaloupes, figs, honeydew melons, kiwi, nectarines, papayas, peaches, pears, and plums.How Does It Work? Remember this rule of thumb: “rot-low, wilt-high.” Fruits that are prone to rot belong in the low-humidity drawer, while produce that's prone to wilting needs to be enclosed completely in the high-humidity drawer.
