We weren’t busy from day one, but we were executing well right away, which was impressive for a 120-seat restaurant with a tiny kitchen and almost no refrigeration whatsoever. The garden was the heart of the restaurant—what gets picked in the morning goes on the plate that same night. It wasn’t long beforecame in to review us. I probably plated most of his dishes myself, so I knew that if he was going to hate it, I would have nobody to blame but myself.
After the review came out we got pretty busy. But Napa is a strange place, and ten years ago there weren’t a ton of restaurants in the downtown area. During tourist season there are a lot of wealthy gourmands looking to indulge, but once the season ends, it’s a city of seventy-five thousand residents who don’t really want to eat fancy vegetables on a cold and rainy winter day. When the season came to a close we went from packed houses to only serving fifteen to twenty people a night.
