IndianaThis is super good as written, or you can modify with what you have on hand. I love how quick and easy it is! The recipe works great with chicken breast or thighs. I HIGHLY recommend using good quality canned tomatoes , and learn from my mistake: don't use a type of canned tomatoes that aren't peeled, the skin is SUPER unpleasant. I've used other curry powder and it's fine, but I prefer the garam masala and use a bit more than this calls for.
It has complex flavor yet, is so easy!#1: this curry sauce is delicious completely as is! Like SO good! #2: will definitely tweak what I do with the chicken next time though. I’ll at least brine it beforehand, but may very well spice it and cook it all the way through before adding it to the curry. Simply chopping the chicken and adding it in at the end leaves the chicken itself extremely bland. #3: agree with another commenter that your dish will not look like the pic.
