Pizza has long been a staple of the freezer aisle, from mini pizza bagels to crowd-feeding pies. One of the most popular form factors? Pizza pockets, aka calzones. Bake up one of these pre-fab frozen concoctions, and you're guaranteed a molten cheese experience—though the flavor might end up being pretty underwhelming.
But never fear. Inspired by pizza pockets of yore, the Epi Test Kitchen developed their own freezable version just in time for the season of back-to-school busyness and longer office days. To build up your own personal stash of ready-to-bake frozen calzones, do what my Epi co-worker Anna did: Cook up a spicy-and-savory filling of chorizo, mushrooms and kale, then stir in some store-bought marinara to make the mixture nice and saucy. Then divide up store-bought pizza dough into individual balls, roll them out a bit, and layer on the filling and a generous sprinkle of shredded mozzarella.
