You might read the ingredient list: potatoes, chickpea flour, red chili powder, black salt, acidity regulator and antioxidant , and wonder,The answer is everything. The crispy, funky, salty, creepingly hot alchemy is like nothing you have ever tasted before. Eat a spoonful of aloo bhujia, and you will want to upturn the whole bag into your mouth. Put it on top of a buttered piece of toast , and all future pieces of toast will feel empty and sad.
Back when I was in elementary school and my family took all our foreign trips in sanitized tour bus form, most of the restaurants we were taken to were less than stellar. These were the sorts of trips where meals were more like brief feeding periods to give us the energy to squeeze five excursions into a single day. So we became the obnoxious family that carted around our own condiments and snacks to liven up whatever bland food was on offer.
