Why buy boxed mix when making cake from scratch is so easy
For the cake, whisk together the eggs, milk, oil, and the 1 1/2 tsp of vanilla extract in a large bowl. Whisk until everything is combined and it looks creamy, do not overmix or it will get frothy.Add the dry mix to the bowl of wet ingredients. Using a rubber spatula, fold the dry ingredients into the wet ingredients, scraping from the bottom and moving the batter to the top. Continue this motion until all of the ingredients are incorporated.
Mix until there are almost no lumps. You don't want to over mix this batter! The mixing process should take maybe a minute, two minutes tops. Grease a 9×13" deep pan with extra oil. You can easily do this by wiping some oil using a paper towel. Pour the batter into the greased pan.While the cake is baking, mix together the frosting. Whisk together the softened butter, powdered sugar, milk, and vanilla extract in a large bowl.
When the cake is finished, do a toothpick test. If a toothpick comes out clean, the cake is done! Leave it to cool completely before frosting.
