Here's how the magic works: Pick your noodles—thick, thin, they all work—add them to a bowl, and cover with hot tap water. Give the noodles a stir or two and wait for the noodles to become limp. Superthin vermicelli noodles will take just a few minutes; thicker, flat noodles will take around 10 minutes. Drain, rinse in cool water, then drain again, and your noodles are ready for dressing.
