Alas, within the parameters I had set for the sheet-pan product test, I was not impressed by the Caraway's performance. The nonstick ceramic coating was almostnonstick for baking cookies, and no matter what I tried the pan couldn’t produce the chewy, fluffy results I was getting with other sheet pans. The dough balls always spread out on the smooth surface ridiculously quickly and each batch came out of the oven looking like I’d slipped in some extra butter.
Still, I held onto my colorful Caraway sheet pan because I realized that while it wasn’t great for cookies, it was the perfect vessel for sheet-pan dinners.Every other baking sheet I tested—even the uncoated ones—were indicated as oven safe up to 450ºF. The Caraway pan can handle an additional 100 degrees all the way up to 550ºF.
