Because you're probably baking more now than you ever have in your whole life.
Any hurdles the cake presents can be easily jumped over. You may look at the recipe for O’Brady’s spice mix, see the words “bee pollen powder,” and close that tab with the quickness. But, this is not a time to be strict about ingredient lists. You can leave the pollen out; likewise, you can nix the dried orange peel. The rest—cinnamon, cardamom, fennel, coffee—you probably have on hand, and if you don’t, well, just do what you can. At the very least you can stir in some coffee grounds.
Make the streusel with whatever spice mix you can hack together, and proceed with the rest of the cake. From here on out it’s basic baking ingredients—butter, sugar, eggs, sour cream—but the resulting cake is anythingbasic. The streusel swirls through the cake in one thick, almost ostentatious, layer of nuts, spices, and caffeine. It’s a bold streusel that is softened by the sweet, citrusy cake that surrounds it, and taken as a whole the dessert is both brazen and subtle, loud and quiet.
