Training is a sacred part of a Jedi's journey, and with Ahsoka knowing how difficult it was to be trained like a soldier during a war, she may have wanted to spare Sabine from receiving the same treatment. This would have given them the necessary time and space in the Star Wars timeline to go through Sabine's training between Star Wars Rebels and Ahsoka.
