Chef Eduardo Garcia survived a life-altering accident that took part of his left arm. Now he uses food and fitness to run for good.
A spacious, sun-lit home with sweeping views of Big Sky Country, complete with a professional-grade “dream kitchen.” A permaculture “food forest” brimming with more than 200 edible plants. An affable dog, a mouse-hunting cat, and a coop of about 20 glossy-feathered chickens.
In the midst of the grueling recovery process, Garcia received another unfathomable twist of fate: a stage two testicular cancer diagnosis. The surgeries were put on pause as he flew home for intensive chemotherapy. That’s when opportunity knocked. A longtime friend invited Garcia to attend a fundraising gala in New York City for the Challenged Athletes Foundation , a San Diego-based nonprofit that helps those with physical challenges participate in sports. While in the Big Apple, Garcia attended a four-mile CAF-hosted fun run in Central Park, where he met an 18-year-old with the same amputation: left arm below the elbow.Garcia recalls the young man asking him if he was going to run with his prosthetic on.
