Chef Brian West founded Taste of the Republic in 2017, a culinary tour of Texas that has kicked off Fiesta’s food events since then.While Chef Brian West was teaching at the Culinary Institute of America, he was dismayed at how little attention Texas cooking received in a class titled “Cuisines of the Americas.” Three days were devoted to New Orleans, but only half a day to Texas, he said.
In revolutionary spirit, West answered the question by writing a manifesto in which he divided Texas into six culinary regions, or “food republics”: the Gulf Coast, with its Cajun-inspired cooking; West Texas, with a Native American influence; North Texas, with its steakhouse culture; Central Texas, the land of barbecue; East Texas, serving Southern-style comfort food; and South Texas, mecca of Tex-Mex.
West, who grew up in the Rio Grande Valley and San Antonio, has had a long and varied career. He got his start as a busboy at the storied Old San Francisco Steakhouse and as a waiter at Boudros Texas Bistro. He went on to open his own restaurant, Café Paladar, in Stone Oak. He would later open Smoke: The Restaurant with partners before “differing visions” led him to leave, he said.
West recently sat to discuss his love of hospitality, his consulting business and his manifesto of Texas Cuisine. The following has been edited for brevity and clarity.The industry kind of picked me. I didn’t choose to do it. I just ended up in it. I enjoyed hospitality as a young man. I would have all the parties at my house. Not super wild parties.
